Junshan Silver Needle is one of China's top ten famous teas, classified as a yellow tea. It’s known for its unique quality and flavor. This tea comes from Junshan Island, located in Dongting Lake in Hunan Province, where the humid climate and fertile soil create the perfect conditions for its growth.
Junshan Silver Needle is characterized by its straight, sturdy buds, which are uniform in size and length. The leaves resemble silver needles, with a golden hue underneath and wrapped in fine white fuzz. When brewed, the tea leaves stand upright in the water, float up and down, and then settle vertically at the bottom of the cup. This mesmerizing process is called the 'Three Rises and Three Falls.' The tea has a bright apricot-yellow color, a clear and lasting fragrance, and a mellow, smooth taste with a lingering sweet aftertaste.
The harvesting and production of Junshan Silver Needle follow strict standards. It is only picked once a year, during a 7-10 day window around the Qingming Festival, with the finest spring buds chosen. The production process involves eight steps: pan-firing, airing, initial baking, first wrapping, re-airing, secondary baking, second wrapping, and final drying, taking a total of 78 hours. The first wrapping step is key to developing the tea's signature flavor, allowing the leaves to ferment and turn yellow, a process unique to yellow tea called 'sealed yellowing.'
