Oolong tea is one of the most diverse and fascinating categories of tea, positioned between green and black tea in processing and flavor. In this presentation, Shirley Chen will introduce newcomers to the basics of oolong—how its raw materials and processing set it apart from other tea types. Participants will also learn how to go deeper: exploring how climate, altitude, and regional terroir influence taste, and how traditional techniques such as fermentation and roasting create remarkable variety. Attendees will leave with practical knowledge to better appreciate, select, and explore the world of oolong tea.
