For green tea, this short spring window is especially important. The young leaves are naturally rich in amino acids, which creates a cleaner taste, softer sweetness, and smoother mouthfeel.
Compared with later harvests, First Flush Longjing is more gentle sweetness and lower astringency. It is harvested only once each year within a very limited seasonal window.
